Wild asparagus with alioli Oliana Cortijo el Puerto

Our dear friend Alexis from The Olive Oil Workshop cooks up Andalusian wild asparagus and a homemade alioli sauce. Her olive oil of choice for this dish is Cortijo el Puerto's Oliana variety. The organic monovarietal creates a perfect pairing for the alioli and asparagus.

Tasting Notes & Parings

Oliana, fruity green and ripe olives of medium intensity, fruit porridge, fennel, apple and ripe banana. In the mouth is sweet, trace notes of nuts such as walnut and chestnut,  without bitterness. Suggesting olfactory notes, very balanced. Ideal for children. We love it  for breakfasts and snacks with traditional and special breads. Try it in mayonnaises or soft emulsions or with white fish.
